Healthy(ish) Apple Empanadas

I actually set out to make healthy mini apple pies. Something to keep the hubby happy since he is on a sugar-free diet. What I ended up with was a tasty empanada. I used my regular spelt tortilla recipe for the crust and added a little stevia and cinnamon. I only added one pack of stevia, but would suggest adding two to the recipe. (If you don't have a tortilla recipe, just ask and I'll post mine later.)

Here's what I used for the filling:

Ingredients:
2 large tart apples
1 1/2 tablespoons butter
1 tablespoon brown sugar (or substitute Stevia or Stevia in the Raw)
2 tablespoons maple syrup (or use honey, or just more brown sugar)
1/2 teaspoon ground cinnamon
Pinch ground nutmeg

Pinch of ginger
a large squeeze of fresh lemon juice, about a teaspoon or so
1/8 cup water

First melt the butter over medium heat in a sauce pan, then add in all other ingredients. Cook for 5-10 minutes until apples are soft. I went ahead and used brown sugar since that's what causes that delicious caramel sauce...

Take about a golf-ball size piece of dough and roll in out. Spoon some apple deliciousness onto one side of the dough...

Making sure you get in some of that tasty sauce.

Then fold the dough over, pinch it shut and place in frying pan. My dough recipe has shortning in it, so I don't grease the pan...it dosn't need it. Just keep a close eye on it, it usually takes less than a minute on each side.

Top with some whipped cream and a little sauce from your apples...

And dig right in. Don't feel too guilty...it's more or less healthy, even if it dosn't taste like it. :)

Finish by licking the rest of that delicious caramely sauce of your plate. No really, go ahead. We won't tell.

New Year Goals

Well, I have a long list of things already planned out for 2012. Here goes.

1. I'm starting a 5 month challenge on January 1st. No junk food of any kind until my birthday. I'm excited to see how happy my body will be after only eating healthy food for almost half a year! A physical trainer once told me to follow this rule: Pick it, Pull it, Skin it. If you can pick it, pull it from the ground, or skin it (meat) then you are eating healthy food. Good rule to live by. :)

2. January 1st I'm also going back on the HCG diet. I'm doing it without Anthony this time, and hopefully that will make it easier. He has got to be the hardest person to diet with. He is going on a low carb, high protien diet and has agreed to do the 5 month challenge with me. Any bets on how long he'll last? lol.

3. Anthony wants to learn how to play the piano. So we ordered some beginner books. I'm excited about teaching him, so we will see how it goes...

4. I am planning on going to massage school this fall. There is a really great school in Maui that I am applying to...keeping my fingers crossed that I will be accepted!

5. There have been a lot of ups and downs since moving to Dillingham. It's been really hard, but things seem to be on a somewhat normal level now. Maybe just because I'm used to it now. But I'm going to try really hard to be happy and stay positive this year. After all, every time I stop and think about how blessed I truly am, I feel guilty for having a bad attitude about where we are. So happy thoughts this year!!

6. And of course, Bible reading has to be on this list lol. Anthony and I have not found a church out here in Dillingham yet. There is one baptist church, but I've heard some different stories about it. We havn't been able to visit yet, because we have both been working opposit shifts and Sundays. Until I quit my job right before vacation. So hopefully we will be able to visit and find out a little about the church soon.

Snow Day

So I've pretty much given up on the December Photo Project. Camera is broken and I've only had internet off and on for the last week. But here's enough pics that should make up for it. :)

PEPPERMINT PATTIES

1 pkg. softened cream cheese

2 tsp. peppermint extract

9 cups powdered sugar

2 cups chocolate chips

3 tsp. shortening

Mix cream cheese with peppermint extract. Add powdered sugar gradually. Shape into 1-inch balls and place on wax paper. Squash into patties. Cover. Let chill at least 1 hour (I usually put them in the freezer).

Melt chocolate chips with shortening gently. Let cool. Dip patties in chocolate. Place on wax paper and allow patties to harden. Keep refrigerated.

Note: While dipping in chocolate, leave most of patties in refrigerator, only taking a few out at a time.

Sea World

After we got back into the country, we drove up to Orlando and met one of Anthony's college buddies, Brandon. We spent a day at Sea World...

This was the night we got into Orlando. We had dinner with Brandon and his wife. Anthony was totally stoked to see him.

The dolphins...yep...took this picture myself. Lol.

So I found these nerds in a fish tank while I was wandering around Sea World...

Then I saw the nerds in the tank start fighting...

Shamu :) This was an awesome show. There were...five or six? whales. They were trained to all kinds of tricks. And of course, at the end they soaked us. For real. We thought we were at least somewhat safe sitting at the top of the first bleachers. We wern't. That's when Anthony comes in handy. You just duck behind him and save yourself. Of course, then he will try to blame you for being wet...for some reason he's pretty sure he gets hit worse just because I was hiding behind him. Dosn't make any sense to me?

More wild horses...there were also random donkeys wondering around...and a few cows lol.

And of course...driving 101 in another country. You have to remember to drive on the wrong side of the road.

After driving around for a few hrs we were real dirty...and HOT. So we went to the beach and jumped in for about an hour or so. At which time the fish decided I was tasty and tried to eat me. But that's a story for a different time.

Grand Turk Island

So our last port of call was Grand Turk. It was a beautiful island...we had a blast!

We drove dune buggies around the island for about three hours - what a blast!

St. Thomas and Puerto Rico

Our second port of call was Charlotte Amalie, St. Thomas, USVI. It was beautiful. Here was pulling up to port.

We took an excursion to Magens Bay and went swimming...beautiful.

The next day we sailed into San Juan, Puerto Rico. I absolutely adored Puerto Rico. We plan on going back someday. :)

We took a ride through the city (it was big) to the rain forest.

I LOVED the flowers in the rain forest...lol I only posted a few of the pics I took.

Then we went on a pretty little hike :)

After the rainforest, we got dropped of in Old San Juan for some shopping. We ate...fuganda? Something like that. It's an authentic Peurto Rican dish made with mashed green bananas....and let me tell ya. It was insane. I could eat this stuff for breakfast, lunch and dinner. I would travel all the way back to Puerto Rico JUST to eat this again.

And I got the chicken. Now I'm hungry.

Miami, Bahamas and cruising :)

Ok, here is leg one of our vacation. Im going to take this in steps because the internet out here takes forever to upload pictures. So before our cruise we spent a few sunny days in Miami.

We embarked at 1600 hrs on Saturday afternoon and arrived at Half Moon Cay, Bahamas the next morning. Just imagine the most beautiful, perfect beach and you have Half Moon Cay :). The white sand was soo soft it felt like you were walking on baby powder. And the water was insanely clear and calm.

We spent about 8 glorious hours here, by the end of which I was pretty much a lobster. Or at least the color of one lol. We had a BBQ on the beach and did a little shopping too (of course). I would have been happy spending all 7 days here!

Here is the next morning on our private balcony....this day was a sea day. So we spent a lot of time in the spa :)

It was real windy.

It didn't mess up Anthony's hair though.

We had dinner that night at Harry's Steakhouse. (A-mazing.)

Anthony ordered the 24 oz porterhouse steak, of course. He's only been waiting for it since our cruise last year lol. He also ate half of my 12 oz ribeye, so...30 oz of steak? Plus sides, appitizers, salad, dessert...not sure how he does it.

Anthony's cheesecake...it was MASSIVE. Delicious though.

And my chocolate sampler...it was all amazingly good. And beautiful, right? But by the time we got to dessert, I managed to take about one bite of each and couldn't fit anymore in. Pitty cause it was all SO good.

We took some videos too, so I will post them once I get them on the computer :).

A piano for me :)

Well, finally got a piano. I found one someone was selling locally for a great price...it's kind of an antique lol - it about 100 years old. But it still plays great, I just need to get it tuned. And find a bench. I told Athony I was so happy that I'll never ask for anything again...until I want something else. :)

Another day in Dillingham

So today we decided to take a little walk down on Kanakanak beach. The sun was shining, luring us into a false sense of security. It was real cold and windy. But we still had a good time. :) We got a tasty chai tea...

And a large cinnamon roll that my husband tried to devour right through the plastic wrap lol

Like I said...cold and windy.

After a while though, we were just numb and we didn't really care anymore.

Yep, that's right. King of the rock. Knocked Anthony right off. With my huge muscles.

Heather asked me to post some pictures of Dillingham...I warned her there wasn't much to see lol. So I brought the camera with me while I was out on my day off.

My camera battery died three pictures later.

So here are the few I managed to take, and I will try to snap a few more maybe next week.

So Heather has been yelling at me about not posting. Turns out there hasn't been much to post about...work, sleep, repeat. That's pretty much my life for another four weeks. Then I'm done! Then we go on vacation.

It's off to Anchorage for a few days where we will run some errands and hopefully I will have some much-needed girl time with my girl Jenni. Then we fly to Miami Beach where we will spend a few days before leaving for our cruise...can't come fast enough!

In St. Thomas we will be visiting Magens Bay, one of the top ten most beautiful beaches in the world. :)

In Puerto Rico we are going to the only rainforest in the US territories...so excited about this!

We don't have any set plans for The Bahamas and Grand Turk Island yet...we are contemplating horseback riding, parasailing, and maybe touring on dune buggies. Who knows. :)

Then we will be in Miami for a few more days, and take a drive up to Orlando where we are meeting one of Anthony's good friends. We will be hitting Sea World while we are there. :)

Then we are headed to Hawaii for about a week for Ty's wedding! So excited to see him...it's been almost two years. Crazy. It will be awesome to spend some time with him and meet Shannon.

Three weeks of pure tropical paradise. :)

Needless to say, we are excited. And pretty much ready to go.

A weekend with my husband

Anthony and I have the same days off for a few weeks this month...it has been awesome! So yesterday we had a nice sunny day and decided to get out of the house for a few hrs. First we drove out to Aleknagik Lake.
Then on the way back we did some blueberry picking. We drove up Snake Lake (highest point in Dillingham) and found a few great picture spots.

There's nothing like Alaskan blueberrys :) Are you weeping yet Heather?
Probably not the best day for pictures...Dillingham life includes only wearing makeup about once a week lol...and yesterday wasn't that day.

So to sum our weekend up, we picked a few berries, went for a drive and got gnawed on by all the mosquitos in dillingham. Go figure.

Fairbanks and things

We found baby papasan chairs at fred meyer! They were so cute...I am pretty sure Chub needs one lol...I think she agreed.

It was great to see everyone for a few days :) Had a really great time.

They've been working me right into the ground ever since I got back from Fairbanks....we are down to two dispatchers right now so that means strait 12s. Besides that everything is about normal here...rainy...not much to do.

Anthony and I are going on another cruise in Oct and we are SO excited about that. This year we will be visiting the Bahamas, St. Thomas, Puerto Rico and Grand Turk Island. Leaving out of Miami of course. :) That means outlet malls and Heat Games! And this go round we are hoping to hit Disney World...we will see. Most exciting is that it means 3 whole weeks to spend together...that's probly more than all the time we've had together for the whole year put together lol...no joke.

I'm hoping to get back to Fairbanks (for more than 4 days this time!) in the begining of Oct to meet little Lucy when she is born. We will see. :)

A bathroom cleaning kind of day

So yesterday on my one day off, I decided to clean my three bathrooms. I put this decal on the wall over the mirror above the sink :) I love how it turned out.
So this is our main bathroom upstairs....I still have to work on organizing the bedrooms more, so those rooms will have to wait a little longer.

You can really tell, but it's actually pretty big.

Anyway, this pretty much summs up my week. The rest of the time I'm either at work or trying to sleep a little. I'm having serious issues with insamnia because I'm working days, swings and graves all in a week every week. So I'm trying to find solutions for not being able to sleep. (suggestions anyone?)

Dillingham has grown considerably in population since it's summer...lots of fishermen and construction crews. Oh yes, construction. They are paving my road. Which will be nice in the long run, but it turns my 5 minute drive into a 30 minute drive...oh well. But with all these people in town, it turns out everyone is out of lettuce. It's not to be had anywhere in Dillingham...which sucks when you just made burgers and you can't have a bun because you're on a diet. Just sayin.

House Part 2

Next project...I plan on getting some paintings for the dining room...some big beachy ones. :)

No pics of the upstairs yet...sorry Ang. It still looks like a tornado landed up there. I've got to order more shelving so I can organize.

I'm planning on flying home to Fairbanks next month...I can hardly wait. You'd think I was a little kid on Christmas lol. I miss the family....and civilization lol. Cant wait to see Ang and my Chub :) Even if she is saving the kitchen to unpack for when I'm there.

It will be great to see Jenn, Phil and the boys...I'm sad they are leaving AK. Maybe I will pester mom at work :D that's always fun. And if she's not on a diet I'll bring her a little treat to atone for being a needy daughter lol. And I've got to put in a request with dad for teriyaki salmon...mmm. I was just telling Anthony that once he tries it, he will never be satisfied with any other salmon.

Now if only Bek, Heather and Ty were going to be home....that would make everything perfect. Bek would boss everybody around and read Pat McMannus, (is that spelled right?) Heather would whip up something delicious in the kitchen and play the piano, and Ty....well if Josh wasn't locking him in the closet, he'd just be doing whatever Ty does. :)

But since they can't be there, I'm sure they'll just call right before dinner like they always do ;)

My House

So Ang has been asking me to post pictures of my house...so here it is, in part. This is only the downstares...I havn't had a chance to do any cleaning or organizing upstairs lately, so that part will have to wait. :)

Dillingham

I finally took a few pictures yesterday. Here's a few of the beach...about a two minute drive from our house.
The ice cap is almost completely melted now :)

And just incase you cant figure this one out, this is us at the beach lol.

Here are a few pictures of Aleknagik Lake. The longest road we have in Dillingham is 20 miles. If you drive all the way to the end of that road, it dead ends into the Lake. It's one of the prettiest spots out here...I forsee picnics in our future.

Not much going on here...we are both working a lot. But next week we are headed down to KY for a little visit. We can't wait to get out of AK for a few...and I can't wait to get in the sun and get a little color lol!

A little update

I know it's been a while since I've been on here...spose it's time for an update. Anthony and I had a great time in Anchorage. It was nice to be able to go out to eat and go see a movie. (And go to a real store.) The highlight of the trip, of course, was when Ang, Josh, and the chub drove down to see us. Ron and Anita drove into town also, and we all had a great time. Chub is talking way more than she was when we left in March! Overall it was a really great time, and we enjoyed seeing them. Right before we headed to the airport, we went to Red Robbin for lunch...at which time I realized I hadn't even taken one picture. So I grabbed the camera and this is the result:

Anyway, it was so freakin windy in Dillingham that people were crossing themselves by the time our little plane landed. The next day we started the HCG diet back up and have been happily starving ourselves ever since, lol. I got a call the day after we got home for an interview...and I started working in dispatch at DPD on Monday. So far it's going really well, and I'm happy to be working again.

Not much else going on...hope everyone back home is dong well!

Headed to Anchorage

Im headed to Anchorage tonight....in a few hrs. ( I should be packing lol.) Anthony has been in Bethel all week for training and we are flying into Anchorage at about the same time...it will be sooo nice to get out of Dillingham for a few days. Remind myself that somewhere in the world there are real stores, where a gallon of milk dosn't cost $8. Anthony and I are gonna do some shopping and have some fun. Then in a few days two of my favorite people are driving down to visit! I'm so excited to see Ang and Chub...can't wait! I really should go start packing now lol...

Year in Review

One year from yesterday my husband and I said "I Do"...seems like it was just yesterday. Bek flew in for a few days and that was so special :). It meant so much to have at least part of my family there. It was very special for Anthony that his family was able to see him married....and his Grandpa married us. The only way the day could have been any better was if the rest of my family and friends could have been there. It has been an amazing year...

We honeymooned in Oct on a carribean cruise....sailing to Grand Cayman, Belize, Honduras and Mexico...the most amazing experiance of our married life :) Those countries were beautiful!

We had a great time just relaxing on Miami Beach...enjoying being togeather.

Lookig forward to the next year!

First Anniversary

Today is our first anniversary. Hard to believe it has already been a year, it has gone by SO fast. In some ways though, it seems like we have been married forEVER lol. It has been the best year of my life though. Wish I had some pictures to post from the last year, but it turns out we still don't have our internet hooked up. People move at their own pace out here...slow. Hopefully though we will have it hooked up by tonight. We stopped by Post and I am stealing a few minutes on Anthony's computer here, so it will have to be short. I miss everyone back home (especially my chub) and hope we will be able to visit soon...maybe in May. Hope everyone is doing well....I like phone calls....emails....texts...visits, lol....

We got our phones in today...SO happy about that. Service is sketchy, but it's better than not having a phone! Our Internet has been in and out also, thankfully it is working tonight lol. Anthony went to hang out with the boys, they are having Poker Night at one of the local officer's house. We are starting to settle in here - and our house is starting to look like a home. I DO love the weather...so much warmer than Fairbanks. My hair loves the weather too...my curls are making a come-back. :) I will post pictures of the house once we finish setting it up. I have to buy curtains for all my windows at some point...turns out finding curtains that arn't almost 90" long is proving difficult...ridiculous. I should know something about the job I interviewed for by the end of the week...and I am looking into some different options too. Anyway, I'm back online so give me a call!!

A day for french toast...

This morning we slept in, then for breakfast I made some tasty french toast, eggs and bacon. Then we decided to get presentable lol...
We spent a large portion of the day at DOT cleaning out Anthony's new patrol veh...it was so bad it really just needed to be torched.

The movers are flying out in the morning to move us in...we are very excited to get settled into our new house. My interview is tomorow also, so it will be a busy day...

First Impressions...

So everyone here keeps asking me what I think....and I honestly have to say I don't know yet. It's not exactly what I expected, that's for sure. I think it will be really pretty in the summer. You can see the ocean from the road leading to our house. There are two smallish local stores that charge you an arm, leg and possibly a liver depending on what you want. On the up side, it is much warmer than Fairbanks.
I am trying REALLY hard to have a good attitude and not decide that I hate it here. Anthony is super excited so it is important to keep an open mind. I DO have an interview on Friday afternoon for the position at AST. I have met most of the guys here and we seem to have a good group.
The movers will be here to move us into our house on Friday morning. It will be nice to get settled down...and have our stuff. We are staying in a little furnished bed and breakfast right now...it's called Caribou Cabin. There is a flat screen w/dish network...Anthony is happily watching the sports channel lol.
I'm proud to say I kept the water works at bay through all the goodbyes...up until last night. Yesterday was a really long day. We only managed to get about 4 hrs of sleep on our last night there, then we got up, finished getting packed and headed to the airport. Jenni met us there for a quick goodbye and we were on our way. We spent all morning flying then arrived in Dillingham with no cell reception. As you can guess, we were REALLY unhappy. After stopping by post and picking up a veh we headed to our new place to do a walk-through. All of the appliances were decrepit and that was a big issue. I'm glad to report that as of today they have all been replaced. Then we spend hrs on the phone ironing out issues like GCI and dealing with the movers.
I will post pictures as soon as possible. And hopefully soon I will have a working phone again.

We arrived safely in Dillingham late this morning. The phones that GCI told us would work "great" out here don't work. So we are officially cut off from the ENTIRE world...I just happened to steal a few moments on a computer at the office. We are working on having new phones shipped to us as soon as possible....will update more later when I have a chance!

Goodbyes...

I hate goodbyes...they are so depressing. So far I have not cryed...I'm saving it all up for when I'm gone lol. This morning I had to say goodbye to my good friend Roxy....it made me sad. Rox is an awesome girl...if she's around your sure to have a good time. :) We were there for each other at work...not sure what I would have done without her...love ya Rox!

Tomorrow I will have to say goodbye to more people I love...like my mom. I will miss her sooo much. I will miss stopping by her work and spending her lunch break with her...

My sister....really not sure what I'm gonna do without her. She's my best friend.

My gurl Jenni...she is the kind of friend you can go months without talking to and when you see each other you just pick right up where you left off...like you talk every day. :)

Phil, Jenn and the boys :) It's always a crazy, good time when they are around.

I will really miss having my sisters just a few minutes away.

Well, we are leaving on Tuesday morning...and I'm still trying to figure out what I'm gonna do without my chub. She's my girl...we're pretty much best friends by now. I tried to convince Ang and Josh to move to Dillingham, but that didn't really work out. So...my plan is to steal her and just see how far I get. :)

I woke up to roses and chocolates this morning...what a sweet hubby...

We brought mom a special delivery at work today...a variety of goodies she can have on her diet. We love mom :)
Had a good day with Anthony...we went to the gym, had some monkey bread, saw a movie....and of course, had a nice dinner at Lavelle's. I love my husband!

and now my house is bare. It actually went a lot better than I thought it would...took about 8 hrs. We had Baileys scheduled to drop off our new furniture (which we ordered in Dec) mid morning. They called me about an hr after they were supposed to show up and said there was a problem...Anchorage had sent the wrong love seat. They said it was now on back order and that they would have it for me in about a month and a half...well...we had words. Lots of words. We got it all figured out though...and besides that, it was a really smooth move! Today we have more packing, cleaning and errands to run. Anthony is at Grand Jury right now and I'm supposed to be at the store lol...so I'd better get on it.

Well, I decided to start blogging again. Figured since I'm moving away I might as well...
We are headed to Dillingham two weeks from today. Movers come first thing in the morning tomorow, so we get to live out of suitcases for the next two weeks. Oh well, this whole move will be an experiance. I'm off to do more packing...
